Note: After pressing Squash Pasta Sauce through a fine-mesh strainer, you keep/use what made it through the strainer. I made more pasta with what didn't
Ingredients:
Pasta
Starchy Pasta Water
Sage
Directions:
Cook your pasta in salted water
Reheat sauce solids in a skillet
Add pasta to the skillet
About a tablespoon at a time, add just enough pasta water to make a chunky sauce that kind of sticks to the pasta
Final Notes:
The discard could have also worked well in some sort of stuffed pasta, or in lasagna. It probably could also be added to gnocchi dough or some other type of dough.
