Note: I didn't make any notes on how I made this meal, and I don't exactly remember making it. But I do recall it being good enough to make note of, so this is my best guess based on the picture.
Ingredients:
Pork Tenderloin
Salt Pork 2 Apples 1 or 2 Sweet Potato
Stock
1 Onion
3 Garlic Cloves Fresh Rosemary Sprig
Fresh Sage
½ cup Rye Berries
To Taste:
Salt
Black Pepper
(Maybe Apple Cider Vinegar)
Directions:
Preheat oven to 400°F (200°C).
Cut the salt pork into strips, roughly chop the sage, and dice the apple, sweet potato, and onion. Mince the garlic.
In a dutch oven, place the salt pork on the bottom. Add the apple, sweet potato, onion, garlic, sage, and rosemary sprig. Season everything in the dutch oven as well as the pork tenderloin with salt and pepper. Add the pork tenderloin on top of everything in the dutch oven. Add (maybe) about a cup of stock to the pot.
Bake until the the pork has an internal temperature of 140°F (60°C).
Meanwhile, in a medium sauce pan, bring salted water to a boil.
Add berry grains, reduce heat, cover.
Let simmer for 50-60 minutes, stirring occasionally, until berries are chewy but tender.
Taste test a piece of apple, potato, onion or pork and add any needed additional seasoning. Add apple cider vinegar if it needs acidity.
Serve apple pork mix over berries and spoon liquid over berries.
