"Mexican Rice"

Note: My minimalist version of American-Mexican restaurant's rice. Might not be exactly what restaurants do, but it's good enough for me at home.


I think I have bought a couple of different varieties of Sazón Goya packets over the years, I usually just pick one at random from the ones that don't have a picture of a tomato (since I'm using tomato bouillon, but maybe I should try that one too sometime). I can't say that I've notice a difference in their taste, with the gaps of time between use. But the most recent type I got does not have red dye, so now my rice is no longer that iconic, vibrant orange (SEE PICTURES BLOW).


Ingredients:

per ¾ cup dry White Rice

1 Sazón Goya packet

2 teaspoons Knorr Tomato and Chicken Bouillon


Optional:

Minced Onion Frozen Corn

Frozen Peas


Directions:

Thoroughly rinse and wash rice


Add rice, seasoning, bouillon, and optional veggies to rice cooker pot


Add necessary amount of water for how much rice you are making


Cook following rice cookers directions




Final Notes:


I'm only looking into this now so I don't actually know much, but I think the red dye in some of the seasoning varieties comes from annatto, a tree seed. While annatto does have some flavor, it's mostly used as am orange-red dye and in rare cases can cause some skin and/or digestion issues.
