Note: Made from cocoa roasted cauliflower and cocoa dry-rub steak leftovers
Berries are cooked like pasta: in a pot with large amount of boiling water and then drained.
Ingredients:
leftover Cocoa Dry-Rub Steak
left over Cocoa Roasted Cauliflower
1½ cups Berry Grains [mix of Rye and Hard Red Spring Wheat]
Directions:
In a medium sauce pan, bring salted water to a boil
Add berry grains, reduce heat, cover
Let simmer for 50-60 minutes, stirring occasionally, until berries are chewy but tender
Towards the end of the grain's cook time, reheat steak and cauliflower [I did both at the same time in a skillet with butter]
Once berries are fully cooked, drain excess water, and add leftover tomatoes
[The berries can be a little difficult to drain because of how small they are. A fine mesh strainer is probably best. My pot lid has small drain holes, and a decent amount were still able to escape.]
Plate the berry-tomato mix and top with steak and cauliflower
Final Notes:
The berries were a really nice addition because of their texture and just to stretch the leftovers there were into a meal for two rather than for just one.
