The dehydrated bananas were kind of a fail, so why not add them to a baked good?
Ingredients:
2 ripe Bananas, mashed
3 Dehydrated Bananas
2 Eggs
1 cup (200g) Sugar
½ cup (113g) Butter (recipe calls for shortening)
2 cups (256g) Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Iodized Salt
optional: ½ cup chopped Nuts
[1 teaspoon Vanilla Extract]
Directions:
Preheat the oven to 325°F (160°C)
Add dehydrated bananas to a food processor fitted with a S-blade and pulverize as much as possible [ended up looking like granola]
In a mixing bowl, combine flour, baking powder, baking soda, and salt
[If butter is cold, beat butter in a standing mixer with the paddle attachment till soft]
In a stand mixer, add butter, eggs, sugar, and vanilla and mix till combined
Stir the flour mixture into the sugar mixture in two parts
Hand mix in the mashed and dehydrated bananas and nuts (saving a little for topping)
Pour batter into loaf pans
Sprinkle saved dehydrated bananas and nuts on top
Bake for 50 minutes, rotating pan(s) halfway through bake
Final Notes:
I felt so bad for only having 2 bananas left for the bread. I think I noticed the difference, but maybe it's just because I knew it wasn't following the recipe.
It would have been cool if the dehydrated bananas could have been worked down to a powder, but that was never going to happen with how sticky these ones were. Probably would have needed a spice mill or coffee grinder to pull that off anyway.
Dehydrated banana topping would have probably done better if it was added at the half way point in the bake, they got kinda brown.
Very unexpected thing, the dehydrated banana in the batter and the topping had a kind of chocolatey flavor, kinda looked like it too! I guess baking a dehydrated banana can almost roast them, cuz they really got that deep, dark flavor that's not quite burnt. Gonna have to play with that again some day!
