Note: Bandara was a restaurant from the Hillstone Restaurant Group in Chicago that closed for good because of Covid. It was a really great salad, I'm glad there are many copycat recipes out there, this is a mixture of a few.
This can be a lot of work if you make everything yourself. Even though I usually make everything, I highly recommend others buy a Rotisserie Chicken and Cornbread Croutons from the store to save yourself some time. But DON'T replace the dressing with something from the store. It's so easy to make and is very good.
Salad Ingredients:
6 Cups Leaf Lettuce chopped
1 cup Cherry Tomatoes chopped
1 cup Corn off the cob
8 Dates pitted and roughly chopped
1 Avocado chopped
½ cup Raw Almonds chopped
1 cup Rotisserie Chicken shredded
½ cup Goat Cheese crumbled
Dressing Ingredients:
½ cup Olive Oil
1 Tablespoon Champagne Vinegar [White White Vinegar can work, but isn't as good]
2 teaspoons Brown Sugar
2 tablespoon Dijon Mustard
1 Lemon juiced
1 Clove Garlic mashed
1/4 teaspoon Dried Basil
1/3 teaspoon Dried Oregano
½ Teaspoon Ground Black Pepper
½ Teaspoon Sea Salt
Directions:
Prepare the dressing by adding all of the dressing ingredients to a small bowl and whisk until fully combined. Or add to a glass jar and shake till combined.
Toss the lettuce with some salad dressing and plate
Top lettuce with all other salad ingredients
Drizzle with more dressing
Final Notes:
Try making the croutons with regular milk next time instead of buttermilk.
