Note: Yeah, cocoa on cauliflower sounds weird! But it doesn't tase like chocolate at all, the cauliflower flavor covered that up, but the cocoa also seemed like it toned down the cauliflower. It was a very nice, roasty dish.
Ingredients:
1 head Cauliflower
1 teaspoon Paprika 1 teaspoon Unsweetened Cocoa ¼ teaspoon Kosher Salt
¼ teaspoon Ground Black Pepper
2 cloves minced Garlic Vegetable Oil
Directions:
Preheat the oven to 400°F (200°C)
Cover a baking sheet with parchment paper or aluminum foil and grease
Core the cauliflower, break it into florets, and cut larger florets in half
In a small bowl, mix the paprika, cocoa, salt, and black pepper together
In a large mixing bowl, add the cauliflower and garlic and drizzle with a good amount of oil
Toss the cauliflower with your hands to evenly distribute the oil
Sprinkle the spice mix over the cauliflower and toss again till evenly coated
Spread the cauliflower in a single layer on the baking sheet and roast in the oven for about 25-30 minutes, until it’s tender and starting to get nice brown spots

This might be Luke's favorite way to have cauliflower now.
Might be interesting to try some normal, salt, pepper, and oil cauliflower from the same head next time to see how this really compared to just roasted cauliflower.
