Note: Served with cocoa roasted cauliflower
Steak Ingredients:
1⅓ lbs Flap Steak (or Flank)
1 teaspoon Smoked Paprika 1 teaspoon Unsweetened Cocoa ¼ teaspoon Kosher Salt
½ teaspoon Ground Black Pepper
1 clove minced Garlic Butter
Steak Directions:
Preheat the oven to 400°F (200°C) for cauliflower
In a small bowl, mix the paprika, cocoa, salt, and black pepper together
Sprinkle the spice mix over the steak and rub till evenly coated
Sprinkle the garlic over the steak, roll or fold the steak so it fits on a plate, and let sit in fridge for at least 40 minutes
Prepare cauliflower and put in oven
Preheat a griddle over the stove
Melt some butter onto the griddle and add the steaks
Brown on one side, flip and cook till the internal temperature reaches 130°F (54°C)
Cauliflower Ingredients:
1 head Cauliflower
1 teaspoon Paprika 1 teaspoon Unsweetened Cocoa ¼ teaspoon Kosher Salt
¼ teaspoon Ground Black Pepper
2 cloves minced Garlic Vegetable Oil
Cauliflower Directions:
Cover a baking sheet with parchment paper or aluminum foil and grease
Core the cauliflower, break it into florets, and cut larger florets in half
In a small bowl, mix the paprika, cocoa, salt, and black pepper together
In a large mixing bowl, add the cauliflower and garlic and drizzle with a good amount of oil
Toss the cauliflower with your hands to evenly distribute the oil
Sprinkle the spice mix over the cauliflower and toss again till evenly coated
Spread the cauliflower in a single layer on the baking sheet and roast in the oven for about 25-30 minutes, until it’s tender and starting to get nice brown spots
Final Notes:
Was also served with some tomatoes that needed to be eaten. They were a nice addition because of their acidity and extra seasoning. Tomatoes were sliced into eighths, cooked in the steak drippings while the steak rested, and seasoned with some extra paprika.
The steak was more chocolatey than the cauliflower, but even it wasn't actually chocolatey. It seemed like that roastiness that can lead to chocolate notes (that the cauliflower didn't really have), it just came from actual chocolate instead of slow browning.
