Note: Served with modified Meatloaf
Ingredients:
6 slices of Bacon 4 cups Red Cabbage 2 cups Apple ¼ cup Balsamic Vinegar
To Taste:
~2 teaspoons Brown Sugar ~1¼ teaspoon Table Salt ~1 teaspoon Freshly Ground Black Pepper
⅛ cup Bourbon
Directions:
Cut the bacon into 1 one inch slices, shred the cabbage, and cube the apple
In a Dutch oven, brown the bacon. Once cooked, remove and set aside the bacon, keeping the rendered fat in the pot.
Add all remaining ingredients to the Dutch oven and mix together. Cook for 20-25 minutes on medium-low heat, or until the cabbage and apple have softened.
Return cooked bacon pieces to the pot and mix in before serving.
Final Notes:
I originally added ⅛ cup (2 tablespoons) of brown sugar and did not like how sweet it became. So I tried to balance that out with some more vinegar, but used Red Wine Vinegar because I find it sharper than balsamic. It still felt like it was missing something, some sort of depth, so that's why the bourbon was added.
