Salt Fat Acid Heat by Samin Nosrat (very familiar with it, just don't own it)
Flour Water Salt Yeast by Ken Forkish (own it on my Kindle, but I don't exactly keep it charged)
Look into More:
Bottom of the Pot by Naz Deravian (was mentioned in an episode of Taste the Nation and sounded interesting)
