Note: I've tried multiple banana bread recipes. At least for me, nothing beats the recipe I grew up with that's from one of my mother's childhood church's cook books. F. White of Columbus, OH in the 1960's, I love you for sharing this recipe.
I don't know why, but the directions I have written down are just "combine ingredients and bake". Probably because I was too lazy to write out the directions Mrs. White had. So these directions are just what I do.
Ingredients:
3 ripe Bananas, mashed
2 Eggs
1 cup (200g) Sugar
½ cup (113g) Butter (recipe calls for shortening)
2 cups (256g) Flour
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Table Salt
optional: ½ cup chopped Nuts
[1 teaspoon Vanilla Extract]
Directions:
Preheat the oven to 325°F (165°C)
In a mixing bowl, combine flour, baking powder, baking soda, and salt
[If butter is cold, beat butter in a standing mixer with the paddle attachment till soft]
In a stand mixer, add butter, eggs, sugar, and vanilla and mix till combined
Stir the flour mixture into the sugar mixture in two parts
Hand mix in the mashed bananas and nuts
Pour batter into a loaf pan [I usually do one thinner, regular sized loaf and a mini loaf or two cuz I like mini loafs]
Bake for 50 minutes, rotating pan(s) halfway through bake
